Fried rice has been on my mind for about a few weeks. I had taken my kids to a birthday party and there was a huge plate of party fried rice front and center, and it looked so delicious! I just knew I had to make my own low carb cauliflower fried rice.
This is a low carb spin on the Nigerian cauliflower fried rice cooked with mixed veggies and liver. This cauliflower fried rice is ready in only 30 minutes from prep to finish.
It is so convenient for those days when you are starving and don’t have a lot of time.
For this recipe, I used a pack of mixed veggies that contain green beans, carrots, peas, and corn. The corn is very minimal and the overall net carbs are still low with only 7 net carbs per serving.
Ingredients used to make Cauliflower Fried Rice
Cauliflower rice: You can buy it pre-packaged but it is very easy to make from scratch.
Mixed veggies and scallions: Use your choice of mixed veggies but be sure to check the carb count.
Olive oil: To saute the vegetables.
Liver: The traditional Nigerian fried rice is usually cooked with liver but feel free to substitute with beef or chicken or leave out for a vegetarian option.
How to make Cauliflower Fried Rice
First, prepare the liver by chopping into cubes and cooking for about 10 minutes with a little salt and pepper. You can omit this step if not using the liver or if you have another protein of choice already prepared.
Chop the scallions and set aside. Add olive oil to a large skillet. Once heated, add your chopped scallions and fry for about a minute.
Add in your mixed veggies, thyme, salt, pepper, bouillon powder. You can also substitute your favorite spices.
After about 10 minutes, add your cauliflower rice and stir in. Add your curry powder and let cook for 8 – 10 minutes or more if you like your rice a little softer. I like mine just slightly firmer so I can feel each bite and savor every taste. Yum!
Your cauliflower fried rice is ready to serve! You can eat as it or pair it with this Nigerian Beef Stew for a very delicious variety!
