Ingredients

cilantro

Instructions
Chop the red bell peppers, scallions, onions, and mince the garlic.
Add olive oil to a large skillet and heat.
Sauté onions and garlic till translucent.
Add the red bell peppers and scallions and cook for 5 minutes.
Add the thyme, curry, bouillon powder, black, pepper and salt.
Stir for about a minute.
Add the cauliflower rice and cook for 5-10 minutes on medium heat, stirring often.
Taste for salt and adjust.
Notes
This recipe serves 4 and contains 6 net carbs per serving.
You can add more low-carb veggies like broccoli or spinach for a more filling dinner.
For a nice variation, you can add shredded chicken or turkey and turn it into a stir fry.
For a touch of heat, add some cayenne pepper.
