Cauliflower Fried Rice
You will love this delicious, low carb, cauliflower fried rice! Made with cauliflower rice and mixed veggies. Just 7 net carbs!

Add olive oil to a large skillet.
Once heated, add chopped scallions and fry for a minute.
Add the mixed veggies, thyme, salt, bouillon powder, and pepper and stir for 10 minutes on medium heat.
Add the cauliflower rice and curry powder and let cook for another 8-10 minutes.
Serve and enjoy!
