Almond Flour Fufu
Almond flour fufu is a quick and easy keto fufu that makes an excellent alternative to high carb fufu like eba and pounded yam. Eat it with any African soup for a satisfying low carb meal!

Ingredients
1
cup
almond flour
1.5
tablespoon
psyllium husk
Instructions
Add one cup of water to a pot and turn on the heat.
While waiting, mix the psyllium husk and almond flour in a bowl.
When the water boils, pour in the flour and stir.
Keep stirring till it begins to thicken.
If after a minute, it is too thick, add very little water and stir some more.
Wrap in a plastic wrap and let it sit for about 30 minutes if you want it firmer (optional).
Serve and enjoy!
Notes
This recipe serves 1 and contains 12 net carbs per serving.
Start with one cup of water and only add more if needed.
Always mix the dry ingredients first, before pouring it in hot water.
