Try these delicious keto brownies if you're trying to satisfy a sugar craving while sticking to your keto diet! These fudgy chocolate brownies taste like the real thing and are the perfect dessert for the chocolate lover in your life.
Preheat the oven to 350°F (175°C). Line an 8-inch square pan with parchment paper.
Add the butter to a small saucepan over low-medium heat.
Once melted, cook the butter until it turns golden brown and has a nutty aroma. Whisk constantly.
Remove the saucepan of browned butter from the heat. Removing the butter from the heat is vital as it is easy to burn the mixture on leftover heat from the burner.
Stir the brewed espresso into the browned butter. The espresso can be hot or cold. Set the mixture aside to cool.
In a medium bowl, combine the almond flour, cocoa powder, salt, and monk fruit.
In a separate medium bowl, beat the eggs and vanilla extract together.
Ensure the browned butter mixture has cooled almost completely, then add the eggs and vanilla to the cooled browned butter. Note: If the browned butter is not cooled enough it will cook the eggs, so allow for ample cooling time.
Pour the wet (egg and browned butter) mixture into the dry (almond flour, cocoa, salt, and monk fruit) mixture.
Stir until fully combined to bring the keto brownie batter together.
Pour the keto brownie batter into the previously prepared 8-inch pan.
Bake the keto brownies for 20 minutes in the preheated oven. Note: The keto brownies are done when an inserted toothpick comes out with only a few crumbs. If the toothpick is still wet after 20 minutes, add more time in 5 minute increments.
Once the keto brownies are done, allow them to cool completely in the pan before slicing, serving, and enjoying.
