In a medium bowl, whisk together the dry ingredients - the almond flour, coconut flour, baking powder, xanthan gum, and salt. Set aside.
In a large mixing bowl, beat together the cream cheese, butter, and powdered sugar until smooth and creamy.
Add the egg and vanilla and beat again.
Stir in the almond flour mixture until smooth. The dough will be sticky.
Transfer the dough to a piece of saran wrap, flatten it into a disc, and wrap it tightly with plastic wrap. Chill the dough for at least 1 hour.
Preheat the oven to 350 F, line two cookie sheets with parchment paper, and set aside.
Place the chilled dough on a piece of parchment paper dusted with powdered sweetener, then sprinkle some powdered sweetener on top of the dough.
Roll to a thickness of ⅛ - ¼” and then cut the dough into Christmas shapes with cookie cutters.
Carefully transfer the cookies to the prepared baking sheet, then bake in the preheated oven for 6-8 minutes or until lightly browned on the bottom and dry on top.
Allow the cookies to cool for 5 minutes on the baking sheet before transferring to a cooling rack to cool completely.
Meanwhile, prepare the cookie frosting by whisking together the powdered sweetener and heavy cream until the desired consistency is formed.
Use a hand mixer or electric mixer for faster results.
Divide the frosting into separate bowls, then use food coloring to achieve different colors.
Pipe or spread the frosting on the cooled cookies.
Notes
If you prefer a softer cookie, reduce the baking time slightly.
For added crunch, sprinkle some chopped nuts on top of the frosting before it sets.
Sugar-free sprinkles can add a fun touch.
Use different shapes of Christmas-themed cookie cutters.
Add a few drops of almond extract to the dough for a nuttier flavor.
Add a few tablespoons of peanut butter to the dough for some delicious peanut butter cookies!
