Ingredients

Instructions
Preheat the oven to 400F.
Break eggs in a bowl.
Add the ham, sausage, and spices, and whisk together.
Line a muffin tin with muffin cups and spray with olive oil.
Pour the egg mixture into the muffin cups, about halfway full.
Top with cheese.
Place in the oven and bake for 15 minutes.
Let it rest for 5 minutes before serving.
Notes
Add your choice ingredients to the creamy mixture before baking. Add chopped red pepper, green onions, green peppers, or any bell peppers you prefer.
Pour in some heavy cream or milk for added creaminess and fluffiness.
You can use just egg whites for this easy egg muffin recipe. They’re equally tasty.
Use a whisk to mix the ingredients so there will be bubbles in the mixture. Bubbles will make the muffins delightfully light and fluffy.
If you add veggies like fresh spinach to the recipe, make sure to slightly cook them, or they will release too much water into the muffins.
If you don’t have keto egg cups, you can use a silicone egg mold or an egg bite mold. You can also use a mini muffin pan for this recipe.
