This slow cooker beef curry is a filling comfort meal that you won't want to miss. The flavors of cumin, ginger, curry, cayenne pepper, and a mix of other seasonings bring amazing flavors to this dish.
Add the stew beef and brown it for aboutr 5 minutes, stirring a few times.
2 lbs stew beef
Take the stew beef out of the pan and place it in the slow cooker.
Add all the other ingredients to the slow cooker.
½ onion, 2 garlic cloves, 1 cup full fat coconut milk, 1 can diced tomatoes, 2 teaspoon cumin, 2 tablespoon curry, 1 teaspoon smoked paprika, ½ teaspoon cayenne pepper, ½ teaspoon ground ginger, ½ teaspoon salt
Cook on low for 8 hours.
Or if you're in a hurry, cook on high for 4 hours.
Taste for salt and adjust, if needed.
Notes
Don't overcook the meat when you're searing it. You just want to sear it enough that the outside browns so that it stays tender.
If you want to thicken the sauce, add a small amount of tomato paste.
You can make this curry a little extra spicy if you like. Add some red pepper flakes to the slow cooker with the rest of the spices.
