Keto deviled eggs are the perfect snack or appetizer for those on a keto or low carb diet. You only need five ingredients, and the creamy deliciousness is ready in just 20 minutes!
Place eggs in a pot and add enough water to cover them.
Bring to a rolling boil, turn off the stove, and cover the pot for 10 minutes.
Use a slotted spoon to scoop the eggs out of the boiling water.
Add the eggs to a small bowl containing ice for 5 minutes (ice bath).
Take out the eggs and peel the shell off.
Scoop out the yolks and add them to a separate bowl.
Add dijon mustard, smoked paprika, salt, and peppers to the egg yolks and mix.
Gently scoop the egg yolk mixture back into the egg halves using a spoon or piping bag.
Garnish with parsley and serve.
Notes
This recipe serves 6 and contains less than 1 net carb per serving.
Use room-temperature eggs. Those won't cool the water as much and will cook more evenly.
The perfect yolk for deviled eggs is firm and pale yellow (but not dry!). Before getting the eggs out of the pot, you can peel a test egg to check the yolk. If needed, leave the rest of the eggs in hot water for an extra minute.
If you'd like to skip mayo altogether, replace the condiment with avocado, sour cream, keto hummus, or full-fat Greek yogurt.
You can use sesame seeds and green onion to garnish the dish.
No need to use a fancy piping bag. Simply make a hole in a small plastic bag or make one out of baking paper.
If you want to add even more high-quality protein to the recipe, add some salmon or bacon bits to the yolk filling.
Add a pinch of cayenne pepper or your favorite hot sauce if you like a bit of heat.
