    • Large eggs. The larger the eggs, the easier it would be for you to fill the egg white halves.
    • Condiments. Mayonnaise and dijon mustard. You can also use avocado oil mayo or regular, unsweetened mustard.
    • Spices. Smoked paprika, black pepper, cayenne pepper, and salt.

    How To Make Keto Deviled Eggs

    1. Place eggs in a pot and add enough water to cover them. Bring to a rolling boil, turn off the stove, and cover the pot for 10 minutes.
    2. Use a slotted spoon to scoop the eggs out of the boiling water. Add the eggs to a small bowl containing ice for 5 minutes (ice bath). Take out the eggs and peel the shell off.
    3. Scoop out the yolks and add them to a separate bowl. Add Dijon mustard, smoked paprika, salt, and pepper to the egg yolks and mix.
    4. Gently scoop the egg yolk mixture back into the egg halves using a spoon or piping bag. Garnish with parsley and serve.

    Storing and Reheating

    Hard boiled eggs can stay in the fridge for seven days. You can keep fully prepared deviled eggs in the fridge for up to 3 days in an airtight container. Make sure to arrange them in a single layer, though, ideally, you would want to keep the whites and the filling separately. 

    You can store deviled eggs at room temperature for a maximum of 2 hours. If you're eating outside on a hot summer day, don't keep them on the table for more than an hour.

    This appetizer is served chilled, so you wouldn't have to worry about reheating the eggs. It is not recommended to freeze the appetizer, as the egg whites will change texture and flavor.

    • The perfect yolk for deviled eggs is firm and pale yellow but not dry. Before getting the eggs out of the pot, peel a test egg to check the yolk. If needed, leave the rest of the eggs in hot water for an extra minute.
    • If you'd like to skip mayo altogether, replace the condiment with avocado, sour cream, keto hummus, or full-fat Greek yogurt.
    • You can use sesame seeds and green onion to garnish the dish.
    • No need to use a fancy piping bag. Simply make a hole in a small plastic bag or make one out of baking paper.
    • If you want to add even more high-quality protein to the recipe, add some salmon or bacon bits to the yolk filling.
    • Add more cayenne pepper or your favorite hot sauce if you like a bit of heat.

    My eggs are not peeling easily. What should I do?


    Don't skip the step with ice-cold water. Shocking the eggs with such water will make the whites shrink just enough to separate them from the shell. Also, try to peel the eggs directly into the bowl with water. This will allow the liquid to seep under the thin film, which, in its turn, will help release the shell. Very fresh eggs don't peel as easily. So it might be better to buy the eggs in advance and let them sit in the fridge for a couple of days.

    Why does this recipe have such a strange name?


    Back in the 18th century, the Oxford English Dictionary used the word 'deviled' to describe a boiled or fried dish that was heavily seasoned. Deviled eggs include pepper and mustard, both of which make the eggs quite spicy. And so the name stuck.
