You probably thought that dinner rolls were out of the question on a ketogenic diet, but that couldn’t be further from the truth! These keto bread rolls are not only easy to make but also a delicious addition to your low-carb dinner table. If you've been missing bread, this recipe is for you.
Preheat the oven to 375 F, line a 9” cast iron skillet with parchment paper; set aside.
In a medium bowl, whisk together the almond flour, coconut flour, baking powder, and salt; set aside.
In a large microwave safe bowl, add the mozzarella cheese and cream cheese and melt in 30 second increments, stirring well after each, until fully melted.
Allow the cheese mixture to cool until it is only slightly warm, not hot, then beat in the eggs and sour cream using an electric mixer until smooth.
Add the almond flour mixture and mix well. Allow to stand for a couple minutes for the coconut flour to hydrate.
Form 12 equal sized balls and arrange in the prepared pan, then brush with butter and bake in the preheated oven for 20-25 minutes, or until lightly golden on top.
Allow to cool for at least 10 minutes before pulling apart and serving.

Flatten out the dough before baking to turn these low-carb rolls into mini keto pizza crusts.
Top with sesame seeds to turn these rolls into low-carb hamburger buns.
