- In a medium bowl, whisk together the dry ingredients, including the almond flour, coconut flour, baking powder, and salt; set aside.
- In a large microwave-safe bowl, add the mozzarella cheese and cream cheese and melt in 30-second increments, stirring well after each, until fully melted.
- Allow the cheese mixture to cool until it is only slightly warm, not hot, then beat in the eggs and sour cream using an electric mixer, stand mixer, or food processor until smooth.
- Add the almond flour mixture and mix well. Allow to stand for a couple of minutes for the coconut flour to hydrate.
- Form 12 equal-sized balls and arrange them in the prepared pan, then brush with butter and bake in the preheated oven for 20-25 minutes or until lightly golden brown on top.
- Allow to cool for at least 10 minutes before pulling apart and serving.
