    ❤️ Why you'll love it

Eggyolks, granulated sweetener and whipping cream
    • Sweetener: Use a low-carb sweetener instead of traditional sugar to keep it sweet without the carbs.
    • Unsweetened Almond Milk: This is a great low-carb substitute for regular milk and makes the base of our keto eggnog.
    • Heavy Whipping Cream: This adds richness and makes the eggnog super creamy.
    • Egg Yolks: These are crucial for that creamy consistency and make the eggnog really smooth.
    • Vanilla Extract: A splash of vanilla warms up the flavor, making the eggnog taste even better.
    • Nutmeg: This spice is a must for any eggnog, giving it that special holiday flavor.

🔪 How To Make Keto Eggnog

Steps to make a Keto Eggnog
    1. In a large saucepan over medium heat, pour the almond milk and heavy cream and whisk to combine. Allow it to heat until it is just starting to steam. Do not boil.
    2. In a medium bowl, whisk together the raw eggs and granulated sweetener until light and fluffy. Pour one cup of the hot milk mixture into the bowl with the eggs, whisking constantly.
    3. Transfer the egg mixture into the pan with the remaining milk and cook over medium heat, stirring constantly, until the mixture starts to thicken.
    4. Remove from heat, stir in the vanilla and nutmeg. Cool this creamy keto eggnog completely and serve with a splash of rum if desired.

    🥫 Storing and Reheating

Store any leftover keto eggnog in the refrigerator for up to 2-3 days in an airtight container. I like reusing a half-gallon milk bottle to store this egg nog in the fridge. To reheat, gently warm on the stove, stirring continuously to prevent curdling.

    💭 Helpful Tips

    • The eggnog will curdle if the temperature gets too high. Likewise, if the temperature is too low, the eggnog may be too thin and watery. Avoid this by keeping a careful eye on the temperature!
    • If you don't have any almond milk on hand, oatmilk, coconut milk or cream will make this homemade sugar-free eggnog even creamier!

    💭Recipe Variations

    • Throw in a pinch of cinnamon for extra warmth and flavor, or stick a cinnamon stick in a fancy glass for a classy look.
    • Top it off with some keto-friendly whipped cream. For a holiday vibe, sprinkle some red and green sprinkles on top and serve it in a fancy glass!
    • For a lighter texture, whip egg whites until they form stiff peaks and fold them into the cooled eggnog.
    • Add a splash of dark rum to make your eggnog a festive adult drink!
    • Go wild with extra vanilla, nutmeg, cloves, allspice, or pumpkin pie spice to ramp up the flavors.
    • A splash of sugar-free maple syrup makes the eggnog extra tasty.
    • Mix half eggnog with half coffee for a caffeinated kick.
    • A drizzle of sugar-free chocolate syrup brings a fun twist to the eggnog.

🍽️ What can I eat this recipe with?

Pair this keto eggnog with keto-friendly gingerbread cookies or a slice of almond flour pound cake for the ultimate holiday treat. However, it also goes great with any keto-friendly dessert as a delicious nightcap.

This eggnog also makes a great addition to coffee or espresso – you can make a homemade eggnog latte! Just brew two shots of espresso, froth the eggnog, and combine for a yummy morning treat. You can serve it hot or over ice, but if you’re drinking this in the morning, you may want to leave out the rum!

    👩‍🍳 Frequently asked questions

What can I substitute for alcohol in eggnog?

If you want to keep this recipe alcohol-free, you can use a non-alcoholic rum alternative.

    Is eggnog high in carbs?

Eggnog usually has a moderate amount of carbs due to the sugar content, but this recipe is lower in carbs since it calls for a sugar-free sweetener.

    Does eggnog raise blood sugar?

Eggnog has a high fat content, so it doesn’t raise blood sugar as much as other sweet drinks. This recipe uses a sugar alternative, so it will not raise your blood sugar.

What is the best alcohol to put in eggnog?

This low carb eggnog calls for rum, but other recipes use brandy. You can also use a mixture of dark rum and cognac, but you are always free to use whatever you prefer!

What are the main ingredients in egg nog?

This creamy eggnog is made with sugar substitute, almond milk, heavy cream, egg yolks, vanilla, nutmeg, and rum. This easy recipe is the perfect holiday drink!
