Ingredients

olive oil

Instructions
Add olive oil to a large skillet and heat.
4 tablespoon olive oil
Sauté the onions and garlic till translucent.
½ onion,
2 cloves garlic
Add the red bell peppers and scallions and cook for 5 minutes.

2 scallions
Add all the spices and stir.
1.5 tablespoon curry powder,
½ teaspoon black pepper,
½ teaspoon bouillon powder,
½ teaspoon thyme,
½ teaspoon salt
Add the cauliflower rice and cook for 5-10 minutes on medium heat, stirring often.
1 lb cauliflower rice
Taste for salt and adjust.
Add optional garnish.

You can add more low-carb veggies like broccoli or spinach for a more filling dinner.
For a nice variation, you can add shredded chicken or turkey and turn it into a stir fry.
