    This curry cauliflower rice, made with scallions and red bell peppers, is a fast and easy low carb dinner ready in just 20 minutes!

    If you've been craving curry rice on your keto journey, look no further! This low carb curry cauliflower rice has a rich, earthy flavor due to the blend of spices used. The curry is not overpowering and it complements the other spices nicely.

    I just love that this dish takes only 20 minutes and I can have a hearty, nutritious dinner in no time. This really helps on those days when I'm too tired to cook an elaborate meal.

    You can also use shirataki rice (konjac rice) for this recipe.

    Ingredients

    • Cauliflower rice: You can buy it pre-packaged but it is very easy to make from scratch.
    • Vegetables: Red bell peppers, scallions, onions, and garlic.
    • Olive oil: To saute the vegetables.
    • Spices: Curry, thyme, salt, black pepper, and bouillon powder.

    How To Make Curry Cauliflower Rice

    1. Chop the red bell peppers, scallions, onions, and mince the garlic. Heat olive oil in a large skillet, and sauté the onions and garlic till translucent.
    2. Pour in the chopped red bell peppers and scallions and cook for 5 minutes. Stir from time to time so it doesn't burn.
    3. Add in the thyme, curry, bouillon powder, black, pepper, and salt, and stir for about a minute.
    4. Add the cauliflower rice and cook for 5-10 minutes on medium heat, stirring often. Taste for salt and adjust.

    Can I use frozen cauliflower rice?

    Yes, frozen cauliflower rice will work well for this recipe. It is actually a lot faster since you don't have to make it from scratch each time you want to cook. Just thaw it a bit and break the lumps into smaller pieces before using.

    Frozen cauliflower rice contains some water, so you might have to steam the curry rice a bit longer so all the water evaporates, or it might become mushy.

    Storing and reheating

    This curry cauliflower rice can be stored in the fridge for 3-4 days. I would not recommend freezing it as it will become quite mushy when you defrost it.

    What can I serve with this recipe?

    This curry cauliflower rice has really strong flavors and will even go with dishes that are quite bland, because of how amazing it tastes. Some of my favorite pairings are beef or chicken. For a vegan option, you can use mushrooms.

    Tips and Variations

    • You can add more low-carb veggies like broccoli or spinach for a more filling dinner.
    • For a nice variation, you can add shredded chicken or turkey and turn it into a stir fry.
    • For a touch of heat, add some cayenne pepper.

    Ingredients

    • 4 tablespoon olive oil
    • ½ onion chopped
    • 2 cloves garlic minced
    • 1 cup red bell pepper chopped
    • 2 scallions chopped
    • 1.5 tablespoon curry powder
    • ½ teaspoon black pepper
    • ½ teaspoon bouillon powder
    • ½ teaspoon thyme
    • ½ teaspoon salt to taste
    • 1 lb cauliflower rice
    • cilantro to garnish

    Instructions

    • Add olive oil to a large skillet and heat.
      4 tablespoon olive oil
    • Sauté the onions and garlic till translucent.
      ½ onion, 2 cloves garlic
    • Add the red bell peppers and scallions and cook for 5 minutes.
      1 cup red bell pepper, 2 scallions
    • Add all the spices and stir.
      1.5 tablespoon curry powder, ½ teaspoon black pepper, ½ teaspoon bouillon powder, ½ teaspoon thyme, ½ teaspoon salt
    • Add the cauliflower rice and cook for 5-10 minutes on medium heat, stirring often.

    • Taste for salt and adjust.
    • Add optional garnish.

    This recipe serves 4 and contains 6 net carbs per serving.
