    I eat a lot of cauliflower rice in my house because it's just so convenient to eat it with the same sauce I make for the whole family. Like my keto jollof rice and keto jambalaya, this keto rice substitute can be very flavorful and delicious when prepared properly.

    And with so many different ways to eat rice on the keto diet, I don't miss regular rice so much.

    This low-carb cauliflower coconut rice has a pleasant nutty taste, thanks to the coconut oil and coconut milk used. It is a perfect side dish to soak up some sauces like my Nigerian chicken stew or goat stew.

    Is coconut cauliflower rice keto-friendly?

    This low carb cauliflower rice is delightfully keto-friendly, which means you can indulge in the delicious dish guilt-free. It contains very few carbs and calories and has loads of nutrients and vitamins. 

    Cauliflower is high in fiber and keeps you full longer, which helps aid weight loss. It is an excellent alternative to white rice on a low-carb diet.

    Ingredients Used

    This recipe requires just a few simple ingredients.

    • Riced cauliflower: You can buy this from the grocery store or make yours at home. I prefer to make mine because it's healthier and cheaper. With one large head of cauliflower, I can get up to four servings!
    • Coconut flavor: Coconut oil and canned coconut milk. Check the ingredients to make sure the coconut milk you're buying doesn't contain harmful additives. I like to use full-fat coconut milk, but you can use coconut cream instead. I use Thai unsweetened coconut milk, thickened with guar gum, so it's not watery.
    • Spices: Garlic powder, black pepper, and salt.

    How To Make This Recipe

    1. Prepare your cauliflower rice. If you want to make your own cauliflower rice, this post will tell you how to prepare your cauliflower rice from scratch. You can make it using whole cauliflower or packaged cauliflower florets. It's so easy to make, and all you need is a blender or food processor.
    2. Pour the cauliflower rice into a large nonstick skillet. Let it simmer until most of the liquid evaporates. This is an important step so that the rice would remain crunchy and not mushy.
    3. When most of the water has evaporated, add the coconut oil, salt, pepper, and garlic powder. Then stir and let it simmer for a few minutes.
    4. Next, add the coconut milk and stir together. Let it simmer on low heat for five more minutes.
    5. Garnish with herbs and serve with your favorite sauce.

    Storing and Reheating

    You can store leftover cooked coconut cauliflower rice in an airtight container in the fridge for up to four days. It can also be reheated on the stove easily with a few tablespoons of water.

    I wouldn't freeze this recipe because recipes with frozen milk do not seem to reheat properly. Also, you can pour the leftover coconut milk into an airtight container and store it in the refrigerator.

    What can I eat this recipe with?

    Coconut cauliflower rice would go wonderfully with stews, sauces, and stir-fries. A great side dish to eat this with is some mixed veggie curry, African peanut stew or leftover turkey stir fry. It's sooo good!

    Tips on making coconut cauliflower rice

    • If using frozen cauliflower rice, let it dry out completely on high heat, so the water evaporates completely. If using fresh cauliflower rice, let it simmer on medium-high heat.
    • You can add unsweetened coconut flakes for texture and more coconut flavor.
    • You can add some soy sauce, coconut aminos, or other low carb sauce to this dish.

    Recipe variations

    • Try different ingredients for an exciting flavor. Add some lime or lemon zest to the recipe. You would love it!
    • Add some turmeric or ginger to make a delectable turmeric golden cauliflower rice dish.
    • I like to use coconut oil to give it an extra coconut flavor, but olive oil will substitute just fine if that's all you have.

    Why does cauliflower rice taste bad?

    Your cauliflower rice can taste bad if you leave it out too long. So make sure you refrigerate it as soon as it has cooled down. And don't use cauliflower that was left out too long, either.

    How do you make cauliflower rice not soggy?

    If you don't want your cauliflower rice to be soggy, remember to dry stir-fry your cauliflower. Doing this would help get rid of excess water that might cause sogginess. Also, don't forget to pat dry with paper towels after washing the cauliflower to get rid of excess water.
