Keto eggnog is a delightful holiday treat that lets you enjoy the creamy, spiced flavor of traditional eggnog without all the sugar. This low-carb version uses ingredients like heavy cream, almond milk, and a sugar substitute like erythritol or stevia to keep it keto-friendly.
In a large saucepan over medium heat, pour the almond milk and heavy cream and whisk to combine.
2 cups almond milk, 2 cups heavy cream
Allow it to heat until it is just starting to steam. Do not boil.
In a medium bowl, whisk together the raw eggs and sweetener until light and fluffy.
6 large egg yolks, ½ cup monk fruit sweetener
Pour one cup of the hot milk mixture into the bowl with the eggs, whisking constantly.
Transfer the egg mixture into the pan with the remaining milk and cook over medium heat, stirring constantly, until the mixture starts to thicken.
Remove from heat, stir in the vanilla and nutmeg.
2 teaspoons vanilla extract, ½ teaspoon nutmeg
Cool this creamy keto eggnog completely and serve with a splash of rum if desired.

The eggnog will curdle if the temperature gets too high. Likewise, if the temperature is too low, the eggnog may be too thin and watery. Avoid this by keeping a careful eye on the temperature!
