Shito sauce, also known as Ghanaian spicy sauce, is a spicy condiment that has the texture of relish and can be used as a dip, spread, marinade, or topping.
Blend the roma tomatoes and habanero peppers in a food processor with a little water.

In a large pot, heat some olive oil over medium heat, then add the finely chopped onion and garlic. Sauté them until they turn translucent and aromatic.

Carefully pour the blended tomato and pepper mix into the non-stick pot.
Add the ground crayfish, shrimp powder, and the other spices.

Stir thoroughly and let the sauce simmer on low heat for about 20 minutes or until it darkens in color to a dark brown, and most of the water has evaporated. Stir occasionally to prevent burning.
Taste the sauce and adjust the spices to your liking.
Once the sauce has reached the desired flavor and consistency, transfer it to an airtight container for storage.

You can experiment with the amount of spices to get your desired level of spiciness.
If you don't have any Roma tomatoes on hand, you can substitute them with tomato paste or tomato sauce.
You can swap out the olive oil for another kind of vegetable oil, like avocado oil or grapeseed oil.
Add extra ingredients like smoked fish or prawns for a seafood twist.
You can add extra fish powder, scotch bonnet pepper, or chili powder for an extra kick.
Add caramelized onions to this sauce for extra flavor.
You can add fresh bell peppers to the shito sauce for more veggies.
If you have different kinds of hot peppers on hand, feel free to add these to this sauce for something different. Red or green scotch bonnets will make the sauce extra spicy.
If you don't want to mess with sautéing the onions and garlic, you can use powdered onion and garlic for easier prep.
