Ingredients

Cookies:

  • 2 ¼ cups almond flour
  • ⅓ cup coconut flour
  • 1 teaspoon baking powder
  • 1 teaspoon xanthan gum

  • 4 oz. cream cheese or ½ brick, softened to room temperature
  • ¼ cup butter softened to room temperature
  • ½ cup powdered sweetener
  • 1 large egg
  • 1 teaspoon vanilla extract

Frosting:

  • 2 cups powdered sweetener
  • 4-5 tablespoons heavy cream
  • Food coloring optional

Instructions

  • In a medium bowl, whisk together the dry ingredients - the almond flour, coconut flour, baking powder, xanthan gum, and salt. Set aside.
  • In a large mixing bowl, beat together the cream cheese, butter, and powdered sugar until smooth and creamy.
  • Add the egg and vanilla and beat again.
  • Stir in the almond flour mixture until smooth. The dough will be sticky.
