    Groundnut soup is not only delicious but also nutritious. Peanuts are packed with protein, vitamins, healthy fats, and minerals, making this soup a healthy and keto-friendly choice. This recipe also adds chicken for extra protein, which pairs well with the peanut flavor.

    • Chicken thighs: Because of their higher fat content, chicken thighs add a bit more flavor to the recipe than other cuts of chicken.
    • Vegetables: I use red bell pepper, spinach, Roma tomatoes, habanero pepper, and onions. 
    • Spices: This recipe calls for bouillon powder, ground crayfish, cayenne pepper, black pepper, and salt. 
    • Groundnuts/Peanuts: Peanuts are more commonly referred to as groundnuts in Nigeria and other West African countries. 
    • Peanut oil: If you don't have peanut oil on hand, you can also use olive or avocado oil.

    🔪 How To Make Groundnut Soup

    1. Blend the peanuts with a high-powered blender.
    2. Wash and pat dry the chicken. Then, rub salt and black pepper on the chicken.
    3. Pour some peanut oil into a pan and add the chicken thighs when heated.
    4. Brown the chicken on both sides for about 5 minutes each. Take the chicken and set it aside.
    5. Blend the tomatoes and peppers together while the chicken is being browned.
    6. Add chopped onions to the same pan and sauté for a few minutes. Remember to scrape the browned bits from the pan.
    7. Pour in the blended tomatoes and peppers and simmer for five minutes. Add in all the spices and simmer for another five minutes.
    8. Add 3 cups of water and bring to a boil.
    9. Pour the groundnuts into the pot and stir till it begins to thicken.
    10. Simmer for 5 minutes, then add the browned chicken.
    11. Add 1-2 more cup of water, if needed, and taste for spices.
    12. Bring to a boil and simmer for about 15 minutes until the chicken is cooked.
    13. Add the spinach to the pot and simmer on low heat till the spinach is soft.

    🥫 Storing and Reheating

    Allow the soup to cool before storing it in an airtight container. Groundnut soup will stay fresh in the refrigerator for up to 3 to 4 days.

    For longer storage, pour groundnut soup into a freezer-safe container and freeze. It can be frozen for up to 2-3 months. Make sure it's well-sealed to avoid freezer burn.

    Reheat the soup in a pot on the stovetop over medium heat, stirring occasionally to ensure even heating. Add a bit of water or broth if the soup has thickened too much in the refrigerator or freezer.

    You can also reheat the soup in the microwave. Place the soup in a microwave-safe dish, cover with a microwave-safe lid, and reheat in short intervals (1-2 minutes), stirring in between.

    Ingredients

    • 6 chicken thighs bone-in
    • 1 red bell pepper
    • 1 habanero pepper
    • ½ onion chopped
    • 4 cups spinach
    • 1.5 cups ground peanuts or peanut butter
    • 2 roma tomatoes
    • 2 tablespoon peanut oil
    • 1 teaspoon bouillon powder
    • 1 tablespoon ground crayfish
    • ¼ teaspoon cayenne pepper
    • ½ teaspoon black pepper
    • ½ teaspoon salt or to taste

    To brown the chicken

    • ½ teaspoon salt
    • ½ teaspoon black pepper

    Instructions

      1.5 cups ground peanuts
    • Wash and pat dry the chicken. Then, rub salt and black pepper on the chicken.
