Cream cheese, almond flour and eggs
  • Flour: I use a blend of almond flour and coconut flour as a low-carb alternative to wheat flour 
  • Cheese: I use a blend of mozzarella and cream cheese. The mozzarella adds a subtle flavor, while the cream cheese adds a creamy texture to the dough. 
  • Baking Powder: This helps the dough rise without the need for traditional yeast.
  • Salt: You need just a little salt for taste.
  • Large Eggs: Eggs act as a binder and help form the structure of the rolls, adding moisture and richness to the dough.
  • Sour Cream: It brings a subtle tanginess and extra moisture, making the rolls soft and tender.
  • Melted Butter: Brushing the rolls with melted butter before baking gives them a beautiful golden color and a rich, buttery crust.

🔪 How To Make Keto Dinner Rolls

Steps how to make keto Dinner rolls
  1. Preheat the oven to 375F, and line a 9 inch cast iron skillet with parchment paper.
  2. In a medium bowl, whisk together the dry ingredients, including the almond flour, coconut flour, baking powder, and salt; set aside.
  3. In a large microwave-safe bowl, add the mozzarella cheese and cream cheese and melt in 30-second increments, stirring well after each, until fully melted.
  4. Allow the cheese mixture to cool until it is only slightly warm, not hot, then beat in the eggs and sour cream using an electric mixer, stand mixer, or food processor until smooth.
  5. Add the almond flour mixture and mix well. Allow to stand for a couple of minutes for the coconut flour to hydrate.
  6. Form 12 equal-sized balls and arrange them in the prepared pan, then brush with butter and bake in the preheated oven for 20-25 minutes or until lightly golden brown on top.
  7. Allow to cool for at least 10 minutes before pulling apart and serving.
