    Tuna Stir Fry With Cauliflower Rice

    If you have a lot of tuna stocked up and you’re not sure what to make with it, try this irresistible tuna stir fry, served with cauliflower rice. You won’t believe how good it is!

    This tuna stir fry has a combination of flavors that will delight and tantalize your taste buds! It is quick and easy and comes together in less than 30 minutes.

    The orange bell pepper has a subtle sweetness but this dish is packed with savory goodness from the combination of spices used. It also makes an excellent lunch that can be meal-prepped and you can eat it over several days without the taste being compromised.

    Ingredients used in making tuna stir fry

    Tuna: I really love the Genovo yellowfin tuna brand. It comes soaked in olive oil and is so much more flavorful than some brands soaked in water. I don’t drain it as the oil really adds to the flavor.

    Vegetables: I use orange bell pepper, broccoli, and onions. You can always use a bag of mixed veggies but I just chopped up what I had on hand. I use a lot of red bell peppers in my recipes but decided to mix things up and use orange bell peppers instead.

    Orange bell peppers are slightly sweet and are not spicy. You can use any color of bell peppers you like, but keep in mind that green bell peppers have a slightly bitter taste and yellow bell peppers have more carbs than the others.

    Spices: I use coconut aminos, black pepper, cayenne pepper, bouillon powder, thyme, and salt. Coconut aminos not only enhances the flavor, but it provides some liquid for the stir fry since you don’t want it to be too dry. If you’re not on strict keto, you can use some soy sauce instead.

    Cauliflower rice: This recipe is best served over cauliflower rice and I have a very helpful post on how to make cauliflower rice from scratch. You can also buy it from your favorite grocery store as a lot of stores now carry pre-made cauliflower rice. You can get it from HEB, Walmart, Target, and Costco, among others.

    Olive oil: for stir-frying.

    How to make Tuna Stir Fry

    If you are using a brand of tuna that comes soaked in water, you will have to drain it first and then break apart with a fork. If it comes soaked in oil, there's no need to drain it.

    Chop up the onions, broccoli and orange bell peppers. Add olive oil to a pan and when it gets hot, fry the vegetables on medium heat. Add some salt and black pepper and stir occasionally. After about 10 minutes, add the tuna, coconut aminos, and the rest of the spices.

    Taste for salt and adjust spices if needed. Let it cook for a few minutes more and stir a few times. Serve over cauliflower rice.

    How to make the cauliflower rice

    You can make cauliflower rice from scratch or get it from the grocery store. If you already have some frozen cauliflower rice, just heat it up in the microwave or on the stove with a little oil and some salt.

    What can I eat tuna stir fry with?

    This goes perfectly with cauliflower rice but you can eat it over shirataki noodles or with any dish that calls for a stir fry.

    This tuna stir fry is also a great meal prep dish for lunch and the cauliflower rice can be packed separately from the stir fry if you wish to do so.

    Tips when making tuna stir fry

    • Make sure the stir fry does not get too dry. If this happens, add a tablespoon or two of water or broth.
    • You can use any combination of low carb vegetables you have on hand.
    • If you use tuna soaked in oil, use the oil from the tuna to enhance the flavor.
    • You can serve this tuna stir fry with shirataki rice (konjac rice) or broccoli rice for a delicious variety!

    • 2 cans tuna
    • 1 lb cauliflower rice
    • 1 yellow bell pepper chopped
    • ½ onions chopped
    • 2 cups broccoli chopped
    • 2 tablespoon olive oil
    • 3 tablespoon coconut aminos
    • ½ teaspoon bouillon powder
    • ½ teaspoon thyme
    • 1 teaspoon black pepper
