Shirataki noodles are a type of noodle made from the konjac yam. They're naturally low or zero carb noodles and taste amazing with the fresh vegetables and seasonings in this low carb stir fry recipe.

One of the things I missed the most about going low carb was my noodle and spaghetti dishes. I think I went a whole year before I discovered the miracle of shirataki noodles, also known as miracle noodles, skinny noodles, or zero noodles.

Each serving of this filling recipe has only 11 gram of net carbs, which is way lower than regular noodles!

🥘 Equipment Used

For this shirataki noodle stir fry, you'll need a large skillet or wok to sauté your konjac noodles and vegetables and a smaller pot for getting the excess moisture out of the noodles.

  • Skinny Noodles: This is my favorite brand of these konjac yam noodles as they require the least amount of time to prepare and they have a nice neutral flavor.
  • Cabbage: Chop your cabbage into bite-sized pieces.
  • Chicken: Use precooked and shredded chicken to make this recipe quickly. Feel free to use other proteins.
  • Olive oil/Palm oil: Choose your favorite cooking oil for high heat.
  • Bell pepper: Use any color of bell pepper you'd like.
  • Mixed veggies: I prefer to use a mix of broccoli, cauliflower, and carrots to make this meal extra filling.
  • Tomato paste: This is a great ingredient for making these stir-fried noodles taste rich and full of flavor.
  • Bouillon: You'll want some bouillon to season these noodles. Use bouillon cubes or paste.
  • Thyme: This aromatic herb will make your shirataki noodle stir-fry smell so inviting.
  • Salt: You'll need just a pinch of salt to season these noodles.
How to prepare shirataki noodles

🔪 How To Make This Recipe

  1. Chop the cabbage, bell pepper, and cayenne pepper.
  2. Wash the noodles and put them in a frying pan on low heat to evaporate excess liquid.
  3. In another skillet, pre-heat oil and add tomato sauce, chopped bell pepper, and cayenne pepper. Stir for 5 mins.
  4. Add mixed veggies, chicken, and spices. Stir and leave on medium heat for 5 mins.
  5. Add shirataki noodles and leave for 5-10 mins.
  6. Taste for salt and add more if you wish.
  7. Serve and enjoy!

🥫 Storing and Reheating

This shirataki noodle stir-fry reheats really well, so I recommend making a double batch for easy leftovers on a busy day. To reheat, simply microwave for 3-4 minutes and enjoy.

💭 Tips and Variations

  •  This recipe uses palm oil, but you can easily substitute olive oil.
  • I used a bag of mixed veggies that also contained carrots. You can omit the carrots if you are on a strict keto diet.
  • Feel free to use your favorite seasonal veggies, like snap peas, snow peas, fresh spinach, bok choy, etc.
  • You can leave out the cayenne pepper if you don't want it spicy.
  • Get creative with your garnish! Sprinkle red pepper flakes, white sesame seeds, or chopped green onion.

🍽️ What can I eat this recipe with?

  • This shirataki noodle stir fry is really a complete meal on its own as it has plenty of crunchy veggies and protein from the tender chicken. It's also great with extra protein, like these Air Fryer Chicken Thighs. This vegetable stir fry tastes great with some of my African chili sauce on top.

What are shirataki noodles made from?

Shirataki noodles are made from the root of the Konjac plant and contain 10 calories, 0 net carbs, and 3 grams of dietary fiber, making them the perfect low carb replacement for your noodle-like dishes. These zero calorie noodles are made up of mostly water and are very popular in Asian cuisines.

Konjac root is very high in soluble fiber and aids weight loss by making you stay full longer. It has also been proven to help reduce blood sugar and insulin levels, reduce cholesterol, and reduce constipation. Once properly prepared, it readily absorbs the flavor of the dish and spices used, which makes it very versatile. They're perfect in this stir fry recipe as they absorb all of the yummy flavors and have the texture of rice noodles.

Are shirataki noodles keto compliant?

Yes! Shirataki noodles are keto and low carb compliant. They are also vegan, gluten-free and sugar-free!

Where can I buy shirataki noodles?

Shirataki noodles can be found in a few stores, especially Asian grocery stores, but they are mostly found online. A few places you can find them include Amazon, Walmart, Asian Food Grocers, and Sprouts Farmers Market.

What is the best brand of shirataki noodles?

I have tried different brands but my favorite so far has been the Skinny Noodles brand on Amazon. It takes me the shortest amount of time to prepare and I don't taste the fishy taste these noodles seem to be known for.
Another great brand is Miracle Noodles, and they sell a few different noodle types like fettuccine and angel hair.

Even the best brands of shirataki noodles need to be prepped before use. They come pre-packaged in a clear liquid and when opened, there is a peculiar odor. If this is your first time using these noodles, don't let this throw you off! There really is a way to get rid of the somewhat fishy odor. Just rinse the noodles in cold water, throw them in the microwave for two minutes, and rinse again.

I just rinse it over running water for about a minute while chopping it with a pair of scissors since the strands are quite long. Then toss in a pan on low heat to evaporate some of the water, and it's ready to go. Boom! Problem solved.

  • 2 Skinny noodles

    Here is a variation which keeps the chicken really moist. grill on pan for the time suggested, then move to a roasting pan. pour a little chicken stock over to coat and cover bottom of pan, then bake 8-10 minutes. The chicken will be very moist while still cooking thoroughly.
