I used to be intimidated by grilling t-bone steak, but once I figured out the right temperatures and timing, I make this at least once a month during summer. This is everything you need to know to get a perfectly juicy t-bone steak on your gas grill every single time.

🧡 Why You'll Love This Recipe

I used to think grilling a t-bone steak was something only professional chefs could pull off. Then I tried it myself and realized it is actually one of the easiest things you can make on a grill.

The t-bone is special because you are getting two steaks in one. That big bone right in the middle gives you the strip on one side and the tenderloin on the other. More flavor, more texture, one cut. I am obsessed.

And the dry rub I use on this? Game changer. It forms this incredible crust on the outside while the inside stays juicy and tender. Once you make steak this way, you will never go back to just salt and pepper.

The best part is it only takes about 20 minutes from start to finish. It's perfect for a weeknight dinner when you want something that feels fancy but takes zero effort.

For this t-bone steak recipe, you'll need a gas grill, tongs, an instant-read thermometer, and aluminum foil.

🧾 Ingredients I Use

  • T-bone steak: It's best to use 1 to 1.5-inch steak for this recipe. You can buy t-bone steaks at most major grocery stores. My local grocery store has a selection of fresh organic meat that is also affordable. 
  • Smoky BBQ dry rub: This grilled t-bone steak is seasoned with a smoky homemade dry rub made from selected, fresh ingredients that deliver the perfect combination of flavors! 

🔪 How To Make Perfectly Grilled T-Bone Steak

This t-bone steak recipe can be scaled up or down very easily. The steps will be the same whether you are making steaks for your family or for a special occasion.

  1. Let your steaks come to room temperature.
  2. Preheat your gas grill to high. Grab my homemade BBQ dry rub and slather it liberally on both sides of the steak.
  3. Place steaks on your hot grill and cook them according to the chart shown below. I like mine medium-well, so I grill my steak for 13 minutes (flipping halfway) to reach an internal temperature of 155F. This pair of tongs is perfect for flipping the steak.
  4. Always use a meat thermometer to check the temperature. See the chart below for the cooking time and temperatures for different thicknesses of t-bone steaks.
  5. When done grilling, wrap your steak in foil and let it rest on your cutting board for about 5 minutes. This will give the juices time to really sink into the steak.  
  6. If you skip this step, the juices will flow out immediately and leave the t-bone steak a bit tough and rubbery.
  7. Serve and enjoy!

How Long Do I Grill My T-Bone Steaks?

This chart shows the internal temperature your steak should reach, depending on your desired doneness. The time shown is for a 1-inch steak. Add roughly 3-4 minutes for a 1.5-inch steak.

♨️ How To Store and Reheat

Storage: Place your cooked t-bone steaks in an airtight container and store them for up to 3 days in the fridge. If you plan on freezing the steak once it's been cooked, I suggest using a vacuum sealing machine to seal it so it stays fresh.

Reheating: Let the frozen cooked steak thaw naturally on its own. You can then heat it by tossing it back on the grill for a couple of minutes, in the microwave, or in the oven. If reheating it in the microwave, I suggest adding butter or a damp paper towel to keep it moist.

  • Make it spicy: The cayenne pepper and paprika usually add a little kick to this recipe. However, if you want even more spice, add my African pepper sauce. It's crazy spicy!
  • Use butter: If you use butter on your steak, you will be floored. It adds an incredible flavor to the steak, especially when mixed with my homemade rub.
  • Use a charcoal grill: I use a gas grill for this recipe, although a charcoal grill will work just as well.
  • Keep the fat: Some people trim off the fat before they grill, but on a low carb diet, healthy fats are your friend, so I leave them on.

🍽️ What to Serve With It

There's not much that doesn't pair well with steak. For an easy lunch, I like to eat my steaks with steamed broccoli and a side of this spicy mayonnaise. You can also eat it with this delicious garlic chili oil. It's so yummy!

This low carb grilled t-bone steak makes for one hearty and delicious dinner, but it needs a side dish to be a complete meal.

What is the best cooking method for T-bone steak?

If you are learning to cook a t-bone steak, the best way to cook t-bone steak is on the grill. The high heat creates the perfect conditions for a juicy steak every time. You can use a gas or charcoal grill but avoid electric grills indoors unless you have a good fan. Always let your steak rest after grilling for a juicy t-bone steak every time.

There are different ways to prepare t-bone steaks, including pan-searing t-bone steak in a hot cast iron pan, the reverse sear method, and sous vide. Many chefs like to use fresh rosemary or compound butter to add extra flavor. I prefer to use my homemade BBQ dry rub as it goes really well with the smoke and char from the grill.

How long should you cook T-bone steak?

Depending on the thickness of the steak, you'll typically need to grill it for over 10-15 minutes for a 1-inch steak. For the perfect t-bone steak, don't forget to allow 5 minutes of resting time to let the juices absorb back into the steak. This is the secret to getting tender t-bone steaks every time!

How do you season a T-bone steak?

Most steak cuts require liberal seasoning to really draw out the flavor of the steak. At a minimum, you'll want to coat the entire steak in a mixture of kosher salt and black pepper. I prefer to use my keto barbecue dry rub recipe as it makes the delicious flavors of the t-bone steak even more noticeable.

  • 2 t-bone steaks
  • 2 tablespoon smoky BBQ dry rub

Instructions

  • Preheat your gas grill to high.
  • Rub both sides of your t-bone steak with homemade bbq dry rub.
